MORTON GROVE, ILL. – Cultured milk and cheese manufacturer Lifeway Foods, Inc., revealed it plans to increase its cheese production and make other technological investments that will cut production time by more than half.

Known for its signature kefir products, Lifeway shared that it is poised to initiate new marketing and advertising campaigns tied to its Farmer Cheese with a goal of introducing the product to more consumers. Coinciding with that strategy, the company said it is adding new automation and efficiency to its cheese production process.

Per Lifeway, its Farmer Cheese tastes similar to cottage cheese, but spreads like cream cheese and comes with the added benefits of protein and probiotics. The company said the small batch dry curd product is up to 99% free of lactose, completely gluten-free and contains no added salt.

Citing a recent TikTok trend of blended cottage cheese videos, Lifeway shared that its Farmer Cheese, which is strained and soft, doesn’t need to be altered at all to achieve a creamy texture.

The Eastern European style cheese, the brand explained, also is known as Twaróg, a variety of quark. Lifeway makes its premium, reduced fat, cultured soft cheese in small batches, using an artisanal recipe. The company first began selling its Farmer Cheese close to 37 years ago.

Per Lifeway, it has witnessed increased interest from consumers and retailers in its specialty cheese in recent years.

The company describes its line of fermented dairy products as tart and tangy. Its kefir, cheese, probiotic oat milk and ProBugs line for kids are sold throughout the US, as well as in Mexico, Ireland and France.
